I have a page that contains a simple gravity form.
My question is how to change (so render ) the title of the gravity forms from h3 heading to h1 heading for SEO purposes ?

I wouldn’t use the title when embedding the form, nor the description. On what ever page you embed the form, in a separate block at the title you wish to you use in an H1 element. How you do that it up to you but it will achieve what you are looking for.
