There is no case study and I have not seen anyone do this, but I would love to see an example if anyone has one to share.

It is definitely possible - and the Etsy API seems to be quite well documented.
What types of actions would you want to follow from a form being submitted?
While the API used in the article is quite different, the article I wrote on automating an onboarding process should have some strongly transferable knowledge for how to setup webhooks, and conditional logic to follow based on values that are mapped back into the entry from the API response (a Gravity Flow feature).
