How can I change the style of the likert survey. It’s the only part I can’t change with elementor but the grey of the background and the border are not really modern.

If you’re styling the form using Elementor or any third-party add-on for Elementor, your best bet would be to contact Elementor support or the author of the add-on that you’re using for advice.
The alternative would be to add your own custom CSS to change those styles, you can use the browser inspector to check for the targeting.
If you’re not good with CSS, there are also third-party plugins to visually select any element in your page, including the form, and style them. For example:
