Is it possible to disable selected categories from add post category field?

Hi, in the post creation ‘category’ field we can either choose all categories OR select them manually one by one.

What if you have a site with massive structured categories number and you solely need one or two to be EXCLUDED (while new categories will come every year as long as the site exists)

Anyone? Protips, code, anything? :wink:
