You need to install the User Registration add-on (available with the Elite licence) and map the form fields to WooCommerce user profile fields. I blogged about that: WooCommerce Signups with Gravity Forms. NB: if you want to have shoppers enter their addresses too, you’ll need another add-on – my GF Address Enhanced, which maps the state/province and country to what WooCommerce is expecting.
