Does anyone have experience dynamically changing the order of pages in a multipage form?
We want to do some A/B testing with certain pages in different orders without creating two entire forms.
Some users would see pages A->B->C, others would see A->C->B.

Changing the order of pages is not a feature of Gravity Forms. What you could try is to duplicate your pages and using conditional logic in the Page fields to determine when to show/hide them.
