We’re using GravityForms for application forms with an upload possibility on a multisite system. Last week, we swapped to a new web host. Since then, “old” links to the applicants downloads in GravityForms emails throw 401s. New download links still work fine. Is there a possibility/ logic to fix those redirects?

Reference Troubleshooting Issues with Gravity Forms Download and Signature Links. From what you are describing, it sounds as if this may be due to the following issues listed there:
The salts in the sites wp-config.php file being changed, invalidating the hashes which are included in the links. This can happen if you’ve migrated your site to a different server recently or if you’re using a security plugin (e.g. Sucuri) to automatically change them. If that is the case, you can get the new download links from the entry detail page.
