Some of my Gravity Form fields aren’t available under Hubspot’s default fields.

In this scenario, how do I make sure that Hubspot captures all the user’s information?

The Gravity Forms Hubspot add-on currently supports field types text , file , number and date. (see item 7 here) We have other field types on our list of requested enhancements and I will add a vote for you.
If you are trying to map one of those four field types and it’s not working for you, I recommend opening a support ticket.
