Let me first say that I don’t need/want a full featured multi language plugin.
My website is in one language only, German.
GF Labels, descriptions, form options, notifications etc are created in german anyway. However there are several system messages that are still in English. Like the file upload field with labels like “Choose file”, “no file selected”, and some others I’ve found when testing.
What’s the best practice to translate these strings?

You don’t actually need a full multilingual plugin for this since your site is only in German. A plugin like Loco Translate should work well for your case.
Loco Translate is not a full multilingual plugin and lets you translate or override strings from plugins and themes directly inside WordPress.
Once installed, you can open Gravity Forms in Loco Translate, search for the strings you want to translate, and add the German translations.

For the File Upload field, when multiple files is disabled, the field uses the browser file input, so the browser controls the strings, and displays them using the language selected in the browser settings.
