Hide options based on selected options

I need to have some field options hide or become unavailable after they are selected one time by any form user.

Example: this is used for scheduling appointments by day and time. For this event there are 3 days and several times available each day. But after one appointment slot is selected and paid by a user then that day//time option is no longer available. I would like for the form to remove each option after it is selected and paid.

I looked through the Community addons and don’t see anything that will handle this. Any ideas are welcome.
