Just updated to 2.5. It appears that the ability to edit the progress indicator, style, and page names on paged forms has been removed. Has it been removed or is this a bug?
This is a bug. The product team is aware and will be issuing a fix.

The latest stable interim build – Gravity Forms v2.5.0.1 – is available from the downloads page. It fixes this issue.
From the change log:
- Fixed an issue that causes certain fields to not trigger the settings tab to open in the form editor.
- Fixed an issue that causes the page break end settings to not be visible in the form editor.
