I am looking for a better way to Display and Sell Specific “Seats” For an Event, Based on a “Seating Chart” or Layout. Each Seat can only be sold 1 for each event. Number a seats will range from 100-1500, so simply listing them has become problematic.

With Gravity Forms Inventory - Gravity Wiz you should be able to create the logic for the seats per date.
About how to display the seats not in a list I’m not sure that we have a ready solution but probably you could use this plugin: Gravity Forms Image Choices Add-on to create a more user friendly front end.
