“# of Kits” is a valid choice, so it is correctly saved to the entry and output in notifications.
To prevent that from happening, you need to delete the choice from the field. You can add the text to the placeholder setting on the appearance panel instead. The placeholder is not a valid choice, so it will not be saved to the entry, and won’t be output in notifications.
