Custom Date Input Type or Replace Date Field

I’m wanting to replace the GF datepicker with something that passes accessibility requirements.

I can’t see a way to add a custom option for “Date Input Type” like we can with “Phone Format”, unless I’m missing something. And I would rather replace the existing datepicker using GF_Field_Date, over building a new custom field using the GF_Field, in case something changes in the future and the field would have to be re-added and then all dependencies would break.
Has anyone had any success with something like this? I’m thinking the only possible way might be to use jQuery
