I am trying to set up a registration form and have it map fields in ActiveCampaign, but it doesn’t give me an option to map the email field. All other fields seem to work fine.

That probably is because you did not use an actual email field in the form. You can’t use a single line text field to capture the email address: it won’t show up for mapping in the feed.
