Why is the email field not responsive and filling the space in the row?

That is the default for the email field. Normally, if you have the “confirm email” feature enabled, it will be on the right. The single input will not expand to fill the space. It may be possible to change that with CSS. If you want us to take a look, please share a link to the page on your site where we can see the form. Thank you.
